Leaf Soup

About a month ago, Jer decided it would be great to make leaf soup--get some leaves off the trees, add some honey and water and wa-la--leaf soup! (Sounds a bit more like tea to me, but that's beside the point.)

I convinced him that it wasn't a great idea to eat leaves straight off the trees with out knowing whether they might be harmful. But I told him that I'd do some research and we'd have some leaf soup the next time he visited.

I'm a poor promise keeper and it was two or three visits later and he was still asking. So this past weekend we had leaf soup. It was a recipe that I'd found in Guideposts several months ago and had tried once or twice and it's very good. It doesn't call for any tree leaves, but it does call for fresh spinach and basil leaves. Very leafy--Leaf Soup.
